The college offers non-credit and special interest courses for adults, and high school students can earn college credits or their degrees.

Members of St. Thomas volunteer with Hope Clinic (a multipurpose medical practice for those in need), Pamlico County Friends of the Library (supporting community‑oriented events at the county library), HeartWorks (providing a safe after‑school environment for children), and Pamlico County Fishes and Loaves Outreach (serving those who are food‑insecure).
